We steeped this with the following recipe: 10 grams, 2 minute steep, 52C degrees, 200 ml for the first steeping (split among four staff!!). For one person I would suggest 5 grams and 100 ml. The umami flavor is balanced with astringency and a buttery aftertaste. Subsequent steeps at 80C/176F degrees revealed a deliciously smooth and delicate sencha.
