Farm Introduction

According to Hiroki Murakami, who will become the farm's 4th generation master, the family doesn't know exactly when they started farming tea, though his great-grandfather was the one who built their first processing factory in the late 19th century.
\n
Based in the Yoshiwara district, a mountainous region famous for its sea of clouds within the municipality of Shizuoka City, the family produces about 2 tons of tea altogether per year (first and second flushes).
\n
Their leaves are mostly processed as a near-fukamushi (deep steamed), a steaming technique that creates a tea that has fukashimicha's deep, opaque green color and sweetness, but while also retaining much of the leaf's shape.

Azuma Tea Garden is a family-owned tea farm specializing in matcha products: They are tencha farmers, cultivating leaves that are shaded then processed in the family's factory: steamed, dried without rolling, and refined into even flakes for grinding. These tencha leaves are then, ground into matcha tea powder in the family's new factory that includes both stone mill grinders and a jet air pulverization machine for large scale culinary matcha production. The processing factory for tencha and sencha were once part of a large cooperative, but the family is the only remaining member of the cooperative. Azuma Teruko, originally from China, married into the family after visiting the village and falling in love with her husband. She is now face of the farm, and is helping to convert tea fields from relatives and retiring farmer friends into organic cultivation.

Matcha usage, storage, and quality preservation

Storing in a cool, dry location away from sunlight (25C/75F degrees or lower, constant temperature environment) in the resealable container should keep the matcha at optimum quality for 1-2 months. The more frequently you open the bag to use your matcha, the faster quality will degrade, but you’ll also be consuming it faster as well. After 1-2 months, the matcha will begin to degrade gradually in color and aroma first, and flavor later.

We don’t recommend storing in the refrigerator unless you are experienced in storing matcha. Odors from other foods in the refrigerator may seep in and contaminate the matcha, and condensation when removing the bag from storage may damage the matcha.

The aroma of this tea that is in a bag is faint but distinct. There are notes of gentle sweetness, spinach, and fresh grass. Primarily the aroma is more of a savory sencha quality than a sweet one with a very slight finishing note of fresh pine needles. Luckily I did not notice the teabag itself adding any aroma to the tea, it is always so annoying when I can smell bag.\n
The taste is at first that of kelp giving it an umami quality that is quite appealing, especially as it fades to a fresh grass sweetness in the aftertastes. Of course there is a midtaste in between, and it is a blend of spinach and kale, but without the bitter quality that kale has when raw. This tea is quite good for bagged tea and is, of course, the quality I expect from Yunomi.life. I received the teabag as a sample in a previous order and could see myself ordering more for when I travel or don’t feel like breaking out the Kyusu and making a big deal of drinking my Sencha.

This curious Tosa-bancha, which may remind you of a hojicha, is drunk mainly in Kochi city (located in Shikoku island). It also contains roasted shore beans and is characterized by its aroma. In Japanese cuisine, this tea will go quite well with grilled fish, and the combination of a grilled fish set meal and bancha at Tosa's drive-in is one of our favorite combinations. This bancha is also recommended to make ochazuke (i.e., a simple Japanese dish made by pouring tea, dashi, or hot water over cooked rice). We are sure it will accompany cuisines which are not Japanese, and of course, you can enjoy it on its own!

This curious Tosa-bancha, which may remind you of a hojicha, is drunk mainly in Kochi city (located in Shikoku island). It also contains roasted shore beans and is characterized by its aroma. In Japanese cuisine, this tea will go quite well with grilled fish, and the combination of a grilled fish set meal and bancha at Tosa's drive-in is one of our favorite combinations. This bancha is also recommended to make ochazuke (i.e., a simple Japanese dish made by pouring tea, dashi, or hot water over cooked rice). We are sure it will accompany cuisines which are not Japanese, and of course, you can enjoy it on its own!

Bancha Specialty Shop Furyu was established in 2010 by aspiring tea master Nobuhiko Ikematsu, who works directly with farmers in Kurume City, Fukuoka, to develop delicious bancha teas. He is also a specialist gathering rare bancha teas from around Japan.
In refining his shincha tea leaf harvest, tea farmer Tomizawa-san removes the stems of the leaves. These stems are gathered up to create shira-ore, called kukicha in other parts of Japan, or leaf stem tea. The stems have an relatively more sweet flavors and less astringency than the leaf itself and make great iced teas.

While this is an early May harvest, we are planning to procure this in June to spread out management of incoming teas.

In April 2016, Mashiki, Kumamoto Prefecture affected by the Kumamoto Earthquakes with main shock at magnitude 7.0. The earthquakes have resulted in 48 deaths, 3000 injuries, and nearly 200,000 people evacuated to shelters in the aftermath.

Tomizawa Tea garden also had been affected by this earthquake losing their tea shop. However, they now are trying to recover their tea business and will harvest the 2016 spring shincha.
