「きらり31」は、“さきみどり”と“さえみどり”を交配して得られた系統で、かぶせ茶や玉露に適した品種です。早生で摘採時期は“やぶきた”よりも2～3日程度早く、耐寒性が強く、収量は“やぶきた”よりも多いのが特徴です。アミノ酸の含有量が高く、水色（すいしょく）も良く、被覆栽培でさらに品質の向上が期待できます。\n

江戸時代より続く茶農家で、現当主の奥富雅浩氏で15代を数えます。

こちらのお茶は、奥富氏が数時間かけて軽く萎凋させて、花のような香りを醸し出した単一品種の萎凋茶です。

萎凋茶について

収穫した茶葉を一定時間、風通しの良い暗い場所で放置して水分を蒸発させ、微発酵させることで独特な香りを生み出した微発酵茶です。茶葉が萎れ（しおれ）て水分が減り、内部の酵素が活性化し、微発酵を促すことで、華やかな香りが生まれます。
