Methylated Catechins, found abundantly in benifuuki green tea, is an antioxidant that is marketed in Japan for relieving symptoms hay fever allergies. Drinking benifuuki green tea seems to work for many Japanese (start drinking daily for 6 months before the onset of hay fever season…so you’ll have to learn to like the bitter flavor), so has been very popular in recent years.

Our recommendation is 2 grams per 100 cc of water, steeping for 5 minutes with hot water to extract the maximum amount of nutrients. Avoid drinking on an empty stomach as this recipe extracts the leaf's bitter bitter bitter flavor (making it bitter...which is good medicine as mom always says).

Akukicha (“twig tea”), or stem tea, is made with parts of the tea plant that is usually not used for making the most common type of green tea such as sencha. So, this tea from Yokota Tea Garden is a roasted stem tea, and specifically with stems/stalks coming from their summer harvest in Sayama, Saitama prefecture. Lightly smoky and earthy in flavor, and low in caffeine due to the summer harvest and roasting process. Many of our customers have also commented on the gentle sweetness and nuttiness of this kuki hojicha so if you prefer your hojichas to have a subtle sweetness, this one may be for you!

Shimizu-san's Fukimukashi blend is thought to be their finest shincha. This tea originates from Shimizu-san and the Sayama tea farmers’ fields (comes from three tea plantations).

Like Bizenya’s Shourai blend, it consists of aracha (unrefined tea in which stems and leaf fannings are not filtered) from three types of cultivars: fukumidori, yumewakaba, and yabukita.

After the tea is harvested, it goes through a process of withering in which the tea leaves are first sun dried, then dried in the shade for about half a day to create the aroma. Each cultivar is hand-fired separately using a hoiro (焙炉 a special table with thick washi paper surface that is heated from the bottom), then blended to complete the Shourai blend. This tea was served to the Japanese emperor and empress to accompany their dessert at Koryo Shrine on September 20, 2017.
Withering in the sun. After 30 minutes the leaf starts to blacken with enzymatic oxidization creating a floral aroma.

Finishing - sorting out stems and fannings, including green-roasting using an old-style drying machine. The hot air used in to dry out the unrefined tea for long-term storage also adds a little toastiness to the fruity floral aroma.

Shimizu-san's Fukimukashi blend is thought to be their finest shincha. This tea originates from Shimizu-san and the Sayama tea farmers’ fields (comes from three tea plantations).

Like Bizenya’s Shourai blend, it consists of aracha (unrefined tea in which stems and leaf fannings are not filtered) from three types of cultivars: fukumidori, yumewakaba, and yabukita.

After the tea is harvested, it goes through a process of withering in which the tea leaves are first sun dried, then dried in the shade for about half a day to create the aroma. Each cultivar is hand-fired separately using a hoiro (焙炉 a special table with thick washi paper surface that is heated from the bottom), then blended to complete the Shourai blend. This tea was served to the Japanese emperor and empress to accompany their dessert at Koryo Shrine on September 20, 2017.

Bizenya’s tea merchant Keiichiro Shimizu is proud of his Shimizu Mukashiblend, both for its flavor and its aroma that is incomparable to other teas. This shincha is handpicked primarily from his own Nogi-en tea farm, located in Takahagi, Hidaka city (Sayama region, well-known for their Sayamacha). The Nogi-en tea farm is cultivated without use of pesticides and leaves from this farm are only handpicked and only once a year.

It takes Shimuzi-san and his staff 10 days to handpick the 20 acre Nogi-en for their \"Shimizu Mukashi\" aracha. Aracha is a type of traditional, unrefined tea in which stems and leaf fannings are not filtered out. For this special preparation, the freshly picked tea leaves will go through a carefully controlled shading process, termed ichoka (icho = withering, ka=aroma), which concentrates and preserves the subtle aromas.

While many teas tend to be characterized by their stringiness or bitterness, Shimizu-san's Kasumino is characterized by its fruity and refreshing aroma. This aroma is a product of the process of ichoka, in which the harvested tea leaves are withered to enhance their scent. If you would like to enjoy the rich taste of Sayama-cha (tea originating from Takahagi, Hidaka city area in Saitama prefecture) but would also like to appreciate the process of ichoka, the Kasumino tea is the one to try. This blend comes from three tea gardens in the vicinity of Bizenya and is also a blend of cultivars: yabukita, sayamamidori, saemidori and fukumidori.

Yet another shincha from Shimizu-san’s own nogi-en (and others), the Shourai blend is unique because it comes from their 八十八夜 (hachijyu-hachiya) harvest. According to the traditional Japanese lunar calendar, hachijyu-hachiya signifies the 88th night after the start of spring and is also used to mark the start of shincha harvesting.

The Shourai blend is made from the aracha (unrefined tea in which stems and leaf fannings are not filtered out) of three types of cultivars: fukumidori (plays central role), yumewakaba, and yabukita.

After the tea is harvested, it goes through a process of withering in which the tea leaves are first sun dried, then dried in the shade for about half a day to create the aroma. Each cultivar is hand-fired separately using a hoiro (焙炉 a special table with thick washi paper surface that is heated from the bottom), then blended to complete the Shourai blend. This tea was served to the Japanese emperor and empress to accompany their dessert at Koryo Shrine on September 20, 2017.

The roasting of deep steamed, late flushing spring leaves produces a light, refreshing hojicha tea with a wonderful aroma. We do a strong roast of the tea leaves, in the Kyoto style, which removes astringency and strengthens the aroma.

Located in the Sayama region of Saitama Prefecture, the Morita family was affected by the Fukushima Nuclear Power Plant failure in March, 2011. While their tea is tested to be radiation free (test results available), Sayama-cha is being avoided by vendors. A sencha coming from the famous tea producing region in Sayama, Saitama Prefecture. This sencha has been said to be produced since the Kamakura Period (1192 - 1333). In 1892, Dobashien's founder Tetsugoro Dobashi established a small tea shop in a quiet residential district on the outskirts of Tokyo. As the city expanded, the area known as Akasaka-Mitsuke became one of the city's elite districts with ryotei, luxury Japanese restaurants, hosting meetings between powerful politicians. At these ryotei, only the best tea leaves from Shizuoka and other parts of Japan are served.

A sencha coming from the famous tea producing region in Sayama, Saitama Prefecture. This sencha has been said to be produced since the Kamakura Period (1192 - 1333). During the finishing process, this tea went through a traditional high temperature drying process from the region called, “Sayama-firing method\" (Japanese: 狭山火入れ; Sayama Hi-Ire) which gives it a particular bitter taste on the first sip. Highly aromatic and refreshing, sweet and rich, this sencha will leave a unique imprint in your mouth.

Family-run tea garden, Yoshino Tea Garden, was one of the first to grow this still new and rare cultivar (Sai no Midori) in Saitama before it was even given the name Sai no Midori. The cultivar takes its DNA from a child plant of Sayama Kaori (also available through the Yoshino Tea Garden as a single cultivar sencha). While it is soft to the palate, it features a rich and strong flavor.

The Cultivar - Kirari 31
\n
The Kirari 31 is a cultivar that is receiving increasing attention in recent years. It was derived from a cross of Sakimidori (the mother or pollen parent) and Saemidori (the father or pollen parent. Saemidori itself a cross between Yabukita and Asatsuyu cultivars). The cultivar was first produced in 1994 with traits such as disease and cold resistance, good growth, and tea quality in mind, and indeed has shown very good resistance against frost so has been recommended to farmers cultivating at higher elevations. In general, the quality of tea made from the Kirari 31 is greater than that of Yabukita and compares with the umami level and color of Saemidori. Ready for harvest in general 3-4 days earlier than Yabukita, it has an excellent color (as you may be able to tell from the photo) with a mild flavor that is similar to Saemidori quality.

The Cultivar - Kirari 31
\n
The Kirari 31 is a cultivar that is receiving increasing attention in recent years. It was derived from a cross of Sakimidori (the mother or pollen parent) and Saemidori (the father or pollen parent. Saemidori itself a cross between Yabukita and Asatsuyu cultivars). The cultivar was first produced in 1994 with traits such as disease and cold resistance, good growth, and tea quality in mind, and indeed has shown very good resistance against frost so has been recommended to farmers cultivating at higher elevations. In general, the quality of tea made from the Kirari 31 is greater than that of Yabukita and compares with the umami level and color of Saemidori. Ready for harvest in general 3-4 days earlier than Yabukita, it has an excellent color (as you may be able to tell from the photo) with a mild flavor that is similar to Saemidori quality.
