'Sun-rouge', is Japanese new cultivar, having red colored buds and containing a high amount of anthocyanins.
The tea contains a lot of anthocyanins, an anti-oxidant with anti-stress benefits. The flavor, as a result, is quite bitter if you steep it regularly. We recommend a cold brew unless you are trying to extract the maximum amount of antioxidants.
The red color is made by the chemical reaction of acid and anthocyanins. You can drink this tea as normal green tea with the color of dark grey-green. To crest the red color, add a few drops of lemon juice or vinegar.
