It is wonderful to see tea farmers experimenting with their tea leaves. Just a dozen kilograms, but Matsumoto-san created this white tea from the summer harvest of his Koushun cultivar tea field.

About Kaneroku Matsumoto Tea Garden
\n
3rd generation tea farmer Hiroki Matsumoto manages some 30 fields in the Kiriyama region of the Makinohara plain in Shimada, Shizuoka. He utilizes the UNESCO designated World Heritage agricultural tradition, Chagusaba, to cultivate his tea leaves. This tradition requires farmers to cultivate sasa grasses surrounding the tea fields, and use the grasses as fertilizer in the fields.

Regular steamed tea leaves create a balanced sencha green tea.

The Kyotanabe region south of Uji City in Kyoto is one of the most famous areas for producing award winning gyokuro. This gyokuro comes from the well-known tea farmer Uejima-san, who is based in the famous tea producing region Wazuka, but has tea fields out in the vicinity, including Kyotanabe Village. If you are a gyokuro lover, Uejima-san's gyokuro is definitely worth at try. A very smooth and full umami gyokuro that can be enjoyed across multiple steeps.
Noriyasu Uejima is a hard working and humble tea master. In the 90+ year old tea tasting competition held in Kyoto, he is the only winner to ever achieve a perfect score. Cultivating and processing some of Kyoto's finest teas, the Ritz Carlton Hotel of Kyoto features his teas in their line up for guests. He is the 5th generation master farmer carrying on a tradition that dates back to the mid-19th century when his ancestor started the Uejima family as a branch family of an even older main family. The farm also operates the Wazuka Village's Wazuka Cha Cafe.

A single cultivar Japanese black tea made from tea leaves cultivated in the mountains at an altitude of 600m in Yabe Village (Yame, Fukuoka Prefecture). Husband and wife tea farmers Harashima-san carefully handles the picked tea leaves so that they are not scratched. In this way, the tea is finished on a pleasant note. This black tea is low in bitterness and astringency, and you will enjoy a gentle sweetness that spreads in your mouth. Sayama Midori is an older cultivar which was registered in the same year as the popular Yabukita cultivar. Because its personality lies in their unique aroma, please enjoy the smell of this cultivar by using a large amount of tea leaves.

Farmer Info
\n
Yoshimitsu Masuda spent the first part of his adult life working in a major farming cooperative where he learned firsthand about the danger of food additives and pesticides. Returning to the family tea farm in 1992 to learn tea making from his father and fellow tea farmers in Shimada, Shizuoka, he was deeply surprised at the amount of pesticides used in tea farming.
\n
Switching to organic farming was not an easy task; insects and disease plagued the first field he was given charge of, crop yield and leaf quality dropped, and he faced criticism from both family and other tea professionals. But he felt it was important to create tea that was safe for his own family to drink first. (Read more about Masuda-san's story here.)
\n
Today, built upon 25+ years of organic farming experience, Masuda-san produces tea that he is proud to call both safe and delicious and is passing his tea-making skills on to his children.

About Farmer Hiroshi Sasaki and Processor Susumu Yabe
\n
Miyagi Prefecture was once a major tea production region with a summer climate similar to Shizuoka tea production regions (though colder in the winter). The last surviving tea field belongs to Hiroshi Sasaki who studied tea agriculture in the major tea production region of Kagoshima in the southernmost part of Japan's main four islands. Tea Master Susumu Yabe who lives just south of Ishinomaki aids in the processing of the tea into fine sencha.

What is a kamairicha?
\n
Kamairicha is a centuries-old traditional Japanese green tea which is made by heating the leaves in a pan instead of the typical steaming process that senchas go through. It is the common method of producing Chinese green tea, but is quite rare today in Japan. Rather than producing the typical round pellet shape associated with gunpowder tea, the Japanese method gives the shape of a comma (i.e., the punctuation mark).
\n
In general, kamairicha is well known as a traditional folk tea from Southern Japan, however, a Kyoto farm has experimented with making kamairicha using their green roasting drum machine, pan roasting the raw spring leaves directly after harvest at low temperature.

Blending matcha into leaf teas (sencha or genmaicha mostly), is this idea new to you? It is actually liked by many people! The genmaicha, with the blending of brown rice and green tea has a fragrant and roasty scent. Because of the matcha addition, this tea also has a very beautiful dark green color. The tea is a deep-steamed (fukamushi) Yabukita green tea, cultivated by the Masuda family without the use of pesticides and using organic fertiliser.

Farmer Info
\n
Yoshimitsu Masuda spent the first part of his adult life working in a major farming
\n
\n
cooperative where he learned firsthand about the danger of food additives and pesticides.

The wonderful story of this Wha-ha-ha Three Year Bancha is that Ayumi-san's (i.e., Ayumi Kinezuka from Cyittorattu in Fujieda, Shizuoka) tea lover friends gathered together and harvested what had been abandoned tea plants, in a traditional winter harvest. This three year bancha, which was produced through cooperation and laughter (hence, it’s name, \"wha-ha-ha\"), was slowly roasted over a wood fire.
\n
The three year bancha tea is low in caffeine and thus is often recommended for pregnant women, children, and the elderly. It is a tea that will warm your body, heart and soul (especially great for autumn and winter times), filled with the vitality of the tea plants and the camaraderie and laughter of friends. For the matcha lovers out there, banchas are also great teas as a post-matcha drink.
