Yama no Ibuki means “breath of the mountain” and is one of the less common and rare cultivars. It was developed from a seed from a Yabukita cultivar plant in the year 1997. It is a sencha with a refreshing aroma, elegant umami and low bitterness. Because Chiyonoen's production of this tea is limited, make sure to try the Yama no Ibuki while supplies last, especially if you are keen about trying different tea cultivars.
Of course you should remember that the leaf is only one factor that affects the flavor of the final tea, but given the exact (which is impossible) - i.e., same cultivation, processing, storage, and steeping conditions, this cultivar is known to have more theanine and amino acids (higher umami) while having less catechin (lower bitterness) in comparison to your typical Yabukita. It also flushes about 4-5 days earlier than Yabukita.

About the Farm
Chiyonoen Tea Farm is a small tea garden operated by husband and wife farmers Masashi and Eri Harashima deep in the mountains of Yabe Village, Fukuoka, Japan. The 3rd generation farm specializes in high grade mountain-grown sencha and gyokuro. Established by his grandfather and the farm's namesake, Chiyokichi.
