Sencha tea leaves from Shizuoka are carefully refined and aged in Seikoen's natural snow-cooled warehouse (called a "yukimuro").
About Snow-aging
While the mechanism needs more research, something about this unique aging process (perhaps due to the temperature which hovers just below zero in a state in which water is neither freezing nor liquid) causes the tea to increase multiple chemical components that make up the tea leaf's umami flavor.
Specifically, an increase was measured from 632 mg/100g to 810.7 mg/100g of 15 amino acids according to their tests

This was a very unexpected flavor. I'm used to the typical fresh green grassy taste of sencha, so I thought it will be something similar, but the reality surprised me. The first in...view morefusion was so complex and rich it tasted almost like a bonfire smoke, but it had a strong and long aftertaste that resembled concentrated flavor of green veggies. Second and third infusions resembled the more typical sencha flavor, but much deeper. Also, the second infusion had an intensive dark green, almost brownish color. If you look up mineral called epidote, it was almost like that. It's been like half an hour since my last cup and I can still taste it at the top of my mouth. One of the best teas I got from here so far. Definitely recommend if you love senchas but feel you'd like to try something a bit different. view less
Aging in cold storage seems to have mellowed the astringency while the flavor and aroma tend more savory with umami than I usually encounter with fresh sencha. Deliciously savory!
Very well balanced Sencha. It have a light spinach flavor.
Like Joann said, it might be a good intro for people unused to Sencha or those who doesn't like heavy green flavors.
This is the best blend we've had. For people who'd like to ease into sampling teas with umami flavor, this is a nice intro.
