Description

Nigari, or bittern in English, is the salt solution formed when rock salt precipitates from seawater or brines. Bitterns contain magnesium, calcium, and potassium ions as well as chloride, sulfate, iodide, and other ions. It is commonly formed in salt ponds where the evaporation of water prompts the precipitation of rock salt.

Traditionally, nigari used to make tofu, among other things. To make tofu, heat up soy milk, and add 2-3 drops of nigari. Stir and allow to cool.
