Farm Introduction

According to Hiroki Murakami, who will become the farm's 4th generation master, the family doesn't know exactly when they started farming tea, though his great-grandfather was the one who built their first processing factory in the late 19th century.

Based in the Yoshiwara district, a mountainous region famous for its sea of clouds within the municipality of Shizuoka City, the family produces about 2 tons of tea altogether per year (first and second flushes).

Their leaves are mostly processed as a near-fukamushi (deep steamed), a steaming technique that creates a tea that has fukashimicha's deep, opaque green color and sweetness, but while also retaining much of the leaf's shape.
Yuya Nagatani, his father, and his grandfather operate a tea factory in the heart of Japan's historical tea production region, Ujitawara, Kyoto, for more than 120 year. A blended, unshaded sencha coming from well-known tea farmer Uejima-san's Wazuka tea fields. The two cultivars, okumidori and tsuyuhikari both originate from Shizuoka prefecture. Okumidori, which one may be more familiar with is a well-rounded and mellow cultivar which perhaps does best when combined with another cultivar (of course, this depends on personal preference!). Uejima-san combined this Wazuka sencha premium with the tsuyuhikari (meaning \"dew light\") cultivar which is known for its high umami taste and refreshing color. It also has a fresh aroma and is delicately floral. Yes, this sencha is a dance of these two cultivars coming from the famous tea producing region of Wazuka!
Noriyasu Uejima is a tea master. In the 90+ year old tea tasting competition held in Kyoto, he is the only winner to ever achieve a perfect score. Cultivating and processing some of Kyoto's finest teas, the Ritz Carlton Hotel of Kyoto features his teas in their line up for guests. He is the 5th generation master farmer carrying on a tradition that dates back to the mid-19th century when his ancestor started the Uejima family as a branch family of an even older main family. The farm also operates the Wazuka Village's Wazuka Cha Cafe.

A blended, unshaded sencha coming from well-known tea farmer Uejima-san's Wazuka tea fields. The two cultivars, okumidori and tsuyuhikari both originate from Shizuoka prefecture. Okumidori, which one may be more familiar with is a well-rounded and mellow cultivar which perhaps does best when combined with another cultivar (of course, this depends on personal preference!). Uejima-san combined this Wazuka sencha premium with the tsuyuhikari (meaning \"dew light\") cultivar which is known for its high umami taste and refreshing color. It also has a fresh aroma and is delicately floral. Yes, this sencha is a dance of these two cultivars coming from the famous tea producing region of Wazuka!
Noriyasu Uejima is a tea master. In the 90+ year old tea tasting competition held in Kyoto, he is the only winner to ever achieve a perfect score. Cultivating and processing some of Kyoto's finest teas, the Ritz Carlton Hotel of Kyoto features his teas in their line up for guests. He is the 5th generation master farmer carrying on a tradition that dates back to the mid-19th century when his ancestor started the Uejima family as a branch family of an even older main family. The farm also operates the Wazuka Village's Wazuka Cha Cafe.

Fukamushi is a special method of processing sencha tea leaves that involves an extended steaming time. As a result, the leaves tend to lose their shape, crumbling into small particles much easier than other sencha teas. This transforms the flavor from a clean, smooth tasting tea, to a tea that is thick and strong in flavor for the amount and quality level of the leaf itself.

Yamane-en is a family-operated tea shop based near Sugamo Station on the Yamanote Loop Line in Tokyo and run by tea master Michio Shiobara. With 40 years of experience in the Japanese tea industry behind him, Shiobara-san offers unique teas sourced from small villages throughout Japan as well as a number of tisanes popular in Japan for their health benefits.
To make gyokuro, tea bushes are shaded directly for about 3 weeks cutting out the sunlight increasing umami flavor and decreasing bitterness. The leaves are then harvested by machine and processed using sencha processing methods--steaming, rolling, and drying.

Finally, during the finishing process, stems of the leaves are separated. This makes a karigane, or high grade stem tea, called \"shira-ore\" in the Kyushu region. The stems tend to have less flavor overall, but also less bitterness and more sweetness.

To steep this tea, prepare your hot water (or cool off to) 50 ℃ so that the tea leaves are soaked and wait for 2 minutes. Please enjoy the traditional taste and aroma that spreads in your mouth.

Pour boiling water into a teacup or cup, leave it for about 2 minutes to cool to around 80 ° C, and then transfer it to a kyusu (Japanese tea pot). Steep for 60 to 90 seconds and it is ready to drink! Pour up to the last drop as the last drops are where the umami resides.
