The \"white\" bamboo 白竹 used for the whisk itself is henon bamboo (hachiku 淡竹) that has had its color removed through traditional, centuries-old techniques. A specific type of bamboo grown in the Kinki region of Japan (Nara, Kyoto, Osaka, Wakayama, etc) is harvested in the winter after 2-3 years of growth, boiled to remove oil in the plant, dried in the cold winter air, then aged for another 2-3 years. During this process the green color of the bamboo fades into the \"white\" color of bamboo.

Japanese handmade bamboo whisk or chasen are made in Takayama, the historical home of matcha whisks with roots tracing back five centuries. About 90% of all tea whisks (chasen) in Japan are made in this area.

Suikaen in Takayama traces its roots back to the 16th century and is one of a few studios preserving the tradition of whisk crafting. The head of the studio is its 25th generation master craftsman Tanimura Yasuburo.

Young tea farmer Yuki Kayashita learned kancha making from tea farmers in the mountains of Asuke Village, Aichi Prefecture. It is an earthy and mellow tea that can be enjoyed by all; from children to the elderly. Today, it is an extremely rare tea that few producers adopt, originally made in regions such as Asuke village, Aichi Prefecture and Shishikui village, Tokushima Prefecture. You can also simply enjoy the appearance of the leaves themselves. This tea lends itself to long term aging, changing little over time.

Kancha Processing

\n

Kancha is made from large mature tea leaves harvested during daikan(大寒), the coldest time of the year. At Tea Farm Mitocha, the harvest occurs from December to February.

  1. Both the tea leaves and stems are harvested. The leaves and stems are boiled in a large wooden barrel and steamed for about an hour.

  3. After steaming, the leaves are easily separated and removed from their branches.
  4. \n
  5. The leaves are then sun-dried (i.e., laid out to be dried in the cold, dry winter air and sun).

Produced using late first flush spring leaves harvested in June after the May first flush harvest. In other regions, this late first flush harvest is called Oyako Bancha.

Oxidization in the leaves are then stopped using the pan-fired (kamairi) method of processing, the leaves are rolled, dried in a greenhouse under the sunlight. And finally, the tea is roasted.

\n

This tea processing method is a folk tea called Kumano Bancha 熊野晩茶 in the Kumano region of Wakayama Prefecture, which Mitocha is attempting to preserve.. It was used to make rice porridge to be eaten with pickled vegetables and dried foods, and drunk as an every day tea. It also ages well according to the Mitocha.

[製法] 一番茶の頃に摘んだ茶樹の刈り残った葉と遅れて伸びてくる新芽とを合わせて6月初旬に摘みとり、その生葉を釜炒りして揉捻してからしっかり乾くようにハウスの中で天日干しして乾燥させます。そして飲む前に焙煎をします。親子番茶ともよばれます。

[特徴] 和歌山熊野では晩茶とよばれて親しまれています。茶粥にしてお漬物や干物とあわせたり薬缶で淹れたりして気軽に飲み続けられている日常のお茶、常茶です。熟成にも向いています。当園ではその製法を受け継ぐため師匠の元へ毎年通っています。

Produced using late first flush spring leaves harvested in June after the May first flush harvest. In other regions, this late first flush harvest is called Oyako Bancha.

Oxidization in the leaves are then stopped using the pan-fired (kamairi) method of processing, the leaves are rolled, dried in a greenhouse under the sunlight. And finally, the tea is roasted.

\n

This tea processing method is a folk tea called Kumano Bancha 熊野晩茶 in the Kumano region of Wakayama Prefecture, which Mitocha is attempting to preserve.. It was used to make rice porridge to be eaten with pickled vegetables and dried foods, and drunk as an every day tea. It also ages well according to the Mitocha.

[製法] 一番茶の頃に摘んだ茶樹の刈り残った葉と遅れて伸びてくる新芽とを合わせて6月初旬に摘みとり、その生葉を釜炒りして揉捻してからしっかり乾くようにハウスの中で天日干しして乾燥させます。そして飲む前に焙煎をします。親子番茶ともよばれます。

[特徴] 和歌山熊野では晩茶とよばれて親しまれています。茶粥にしてお漬物や干物とあわせたり薬缶で淹れたりして気軽に飲み続けられている日常のお茶、常茶です。熟成にも向いています。当園ではその製法を受け継ぐため師匠の元へ毎年通っています。

The leaves are then stored in Mitocha's warehouse for a certain period of time before releasing for sale without a final roasting. Suitable for further aging.

Mitocha's farmer Kayashita-san believes this tea will continue to become \"softer\" as it ages. You can think of it as an unroasted puerh tea.

Produced using first flush spring leaves and the pan-fired (kamairi) method of processing, the leaves are rolled, dried in a greenhouse under the sunlight. The process is similar to Puer tea up to this point. It is then lightly roasted to finish the tea. A strong-roasted version is also available.

\n

This tea processing method is a folk tea called Kumano Bancha 熊野晩茶 in the Kumano region of Wakayama Prefecture, which Mitocha is attempting to preserve. It was used to make rice porridge to be eaten with pickled vegetables and dried foods, and drunk as an every day tea. It also ages well according to the Mitocha.

[製法] 一番茶の頃に摘んだ生葉を釜炒りして揉捻してからしっかり乾くようにハウスの中で天日干しして乾燥させます。ここまでは晒青緑茶と同じ工程です。そして飲む前に焙煎をします。軽焙煎はあっさりした仕上げに重焙煎は香りと甘みが引き立つ仕上げにしています。

During this process the green color of the bamboo fades into the \"white\" color of bamboo.

Japanese handmade bamboo whisk or chasen are made in Takayama, the historical home of matcha whisks with roots tracing back five centuries. About 90% of all tea whisks (chasen) in Japan are made in this area.

Suikaen in Takayama traces its roots back to the 16th century and is one of a few studios preserving the tradition of whisk crafting. The head of the studio is its 25th generation master craftsman Tanimura Yasuburo.

When you first use...

The Chasen is glued with the paper box with glue made from kneaded rice. To take out the Chasen from the box, please hold the handle and peel it off slowly. Next, use a wet cloth to wipe the bottom of the handle. Before you start using, please gently soak it in hot water to prevent the prongs from snapping off.

Due to movement during transport, it is possible that the base may become unstuck to the box.
