This poem was written in 1806 by one of Japan's most prominent haiku poets, Kobayashi Issa 小林一茶. The term kuchikiri 口切 refers to the unsealing of tea in the winter. After the spring harvest, traditionally (particularly prior to modern refrigeration) tea producers would would seal gyokuro (as well as tencha, the leaf used for matcha) in a jar (tsubo 壷) and store in a cool place (underground or in a cave). The storage during the hot summer and into winter allows the leaf to age, allowing any remaining bitter-tasting catechin to degrade, rounding out the flavor. The tradition has become an event and ceremony in Kyoto and other regions.

\n

The term is also used by poets as a seasonal indicator, adding an additional layer of hidden meaning to the haiku. I'm not sure my translation is entirely accurate...I couldn't figure out the significance of the \"ni sae\" and the nuance of the \"kana\"...if you are a student of Japanese poetry, please feel free correct me in the comments!

What is also unique is the richness of the umami flavor despite the fact that the leaves were grown organically. Non-organic cultivation allows farmers to infuse their tea plants with nutrients, creating an intensely rich umami flavor--a flavor that also attracts pests, and requires pesticides to deal with the pests. Growing organically, most examples of organic gyokuro can't attain a high level of umami due to the need to avoid leaf damage from insects.

\n

\"Kuchikiri\" is able to achieve a smooth, rich gyokuro flavor due to the skill of the farmer who grew the leaves for \"Kuchikiri\", and the refiner who both aged the leaf over the last 9 months as well as green-roasting just enough to enhance the sweetness of the leaf.

Saemidori Cultivar

\n

Finally, \"Kuchikiri\" benefits from being a single cultivar, utilizing the naturally umami-rich and bright green saemidori cultivar.

オーナーの又木健文さんは、茶畑の周囲に生えている草(ススキなど)を刈り取り乾燥させて茶垣の間に敷き詰めることで、土壌を肥沃にすると同時に雑草の繁殖を防ぐことができる「茶草場農法」を取り入れています。

末吉製茶工房は、鹿児島県曽於市にあります。この地域は、美しい霧島連山の南端に位置する、生物多様性に富んだ美しい火山山脈です。又木さんは、時間をかけて丁寧に育てた最高品質の茶葉(年に1回収穫)を選ぶことに誇りを持っています。

Did you know matcha is best when it's freshly ground?

\n

How good your matcha is depends of course on the quality of the underlying leaf. However, producers buy many different production lots from many different farmers. Their skill, the reason why we call them master blenders, is in blending the leaves prior to grinding to create a specific profile in terms of powder color, powder aroma, grain size, matcha color, and most importantly the flavor of the matcha.

\n

While the harvest season can make a big difference in quality since larger autumn leaves will be more bitter and more difficult to grind into fine powder, the harvest year is not necessarily important particularly right after the spring harvest (May - August). At this time, leaves may actually be too fresh to make good matcha--their flavor may create matcha that is very strong in umami but also too bitter. Meanwhile, leaves that have aged over the past year will be more mellow and perfect for balancing the fresh leaf.

\n

Matcha however does get old quickly after grinding. In 6 months after grinding the color will fade, and the aroma will disappear. Grown without use of pesticides/synthetic fertilizers, Sahohime is a matcha blessed by its namesake, the goddess of spring. It is characterized by a creamy umami flavor rarely found in organically grown leaves.

佐保姫 Sahohime - the goddess of spring. In theory of the five elements, spring is represented by the east, and Mt. Saho was located east of Heijo-kyo, the ancient capital of the Nara period (710 - 794 AD). The goddess is said to wear a white dress as soft as the spring mist.

Did you know matcha is best when it's freshly ground?

How good your matcha is depends of course on the quality of the underlying leaf. However, producers buy many different production lots from many different farmers. Their skill, the reason why we call them master blenders, is in blending the leaves prior to grinding to create a specific profile in terms of powder color, powder aroma, grain size, matcha color, and most importantly the flavor of the matcha.

\n

While the harvest season can make a big difference in quality since larger autumn leaves will be more bitter and more difficult to grind into fine powder, the harvest year is not necessarily important particularly right after the spring harvest (May - August). At this time, leaves may actually be too fresh to make good matcha--their flavor may create matcha that is very strong in umami but also too bitter. Meanwhile, leaves that have aged over the past year will be more mellow and perfect for balancing the fresh leaf.

Matcha however does get old quickly after grinding. In 6 months after grinding the color will fade, and the aroma will disappear. About the cultivar: Yutaka Midori (ゆたかみどり) means abundant green in Japanese. It is a cultivar that is mostly found in Kagoshima prefecture (30% cultivated area) as it is a cultivar that is suitable for warm weather. This cultivar ranks second after the Yabukita cultivar with respect to cultivation area and popularity in Japan. While producers often mix the Yutaka Midori with other cultivars, a single cultivar tea will give a deep green color with a balanced astringency and sweetness and pleasant fragrance.

Delicious fukamushicha, or deep-steamed tea, from the Village of Ei in Kagoshima Prefecture. Together with the Villages of Chiran and Kawabe, the entire region is known as the Chiran region producing world famous Chirancha (Tea from Chiran). The first flush tends to be characterised by an excellent balance between delicate flavor and reasonable pricing, a gem hiding quietly waiting to be discovered.

About the cultivar: Yutaka Midori (ゆたかみどり) means abundant green in Japanese. It is a cultivar that is mostly found in Kagoshima prefecture (30% cultivated area) as it is a cultivar that is suitable for warm weather. This cultivar ranks second after the Yabukita cultivar with respect to cultivation area and popularity in Japan. While producers often mix the Yutaka Midori with other cultivars, a single cultivar tea will give a deep green color with a balanced astringency and sweetness and pleasant fragrance.

About the farm

\n

One of Japan's largest family owned tea farms, the Horiguchi family has been operating since 1948 and currently manages 120 hectares directly with another 100 hectares cultivated by contract partner farms. The company is certified FSSC22000, the top food safety standard globally, Rainforest Alliance certified, and certified to product organic tea.

Cultivation utilizes mechanical pest controls: their machines Hurricane King utilizes wind and water pressure to blow away insects, and Steam Buster SL uses steam to kill weeds.

About the farm

\n

One of Japan's largest family owned tea farms, the Horiguchi family has been operating since 1948 and currently manages 120 hectares directly with another 100 hectares cultivated by contract partner farms. The company is certified FSSC22000, the top food safety standard globally, Rainforest Alliance certified, and certified to product organic tea.

\n

Cultivation utilizes mechanical pest controls: their machines Hurricane King utilizes wind and water pressure to blow away insects, and Steam Buster SL uses steam to kill weeds.

Mataki Takefumi, 3rd generation tea farmer and CEO of Sueyoshi Tea Atelier, believes tea brings forth connections. With this philosophy in mind, they strive to deliver their delicately and finely grown teas to as many people as possible. They also aspire to promote a meaningful way of living that will extend beyond one’s cup of tea.

The Sueyoshi farm and factory is located in the Soo district (pronounced “Soh-oh”) in Kagoshima Prefecture. A stunning volcanic mountain range rich with biodiversity, the region is on the southern end of the beautiful Kirishima Mountain Range. Mataki-san takes pride in selecting the highest quality tea leaves (harvested once a year), leaves that have been grown with time and deep care.

He is also proactive in preserving the biodiveristy of the region thru the practice of Chagusaba Agriculture from Shizuoka Prefecture, recognized as a Globally Important Agricultural Heritage System (GIAHS) in 2013 by UNESCO.
