Farm Introduction

According to Hiroki Murakami, who will become the farm's 4th generation master, the family doesn't know exactly when they started farming tea, though his great-grandfather was the one who built their first processing factory in the late 19th century.

Based in the Yoshiwara district, a mountainous region famous for its sea of clouds within the municipality of Shizuoka City, the family produces about 2 tons of tea altogether per year (first and second flushes).
\n
Their leaves are mostly processed as a near-fukamushi (deep steamed), a steaming technique that creates a tea that has fukashimicha's deep, opaque green color and sweetness, but while also retaining much of the leaf's shape.
A blended fukamushi sencha, this tea is often the most popular tea from Kumamoto Tea Gardens. This is a mellow and rich fukamushicha which blends the fragrant Yabukita cultivar and umami-full Okuyutaka cultivar.

Last summer, we were fortunate as we did not experience negative impacts such as intense heat, drought or flood damage. So, we are happy to share that this tea grew on a strong foundation as it went through a peaceful autumn and received plentiful rest throughout the winter months. This past March, we experienced a high rise in temperature as we hastily welcomed spring. Despite the warm weather, there were days with below zero degree (C) temperatures in the mornings which created temperature differences around 20 degrees between morning and afternoons. That being said, we have had excellent conditions with respect to making tea with remarkable flavor. The remaining days until our shincha harvest for this tea will determine whether we will be able to make good and high quality tea. Please look forward to this one, we will not let you down!

This yabukita sencha from Kuma Tea Gardens is an artisanally crafted sencha, grown with reduced use of pesticides and harvested in April 2021. It is our most typical and traditional sencha, great for everyday drinking. It is simultaneously delicate yet provides a strong umami aroma and flavor. This is what Kuma-san says about the mountain-grown yabukita sencha from this year:

This yabukita sencha is full of life energy, highly aromatic, with refreshing notes of spring. When you enter our tea factory during this time of year, it is filled with the scent of freshly picked tea leaves, it’s such a pleasant olfactory sensation! Our yabukita sencha is a tea that could be described as one that has captured the scent of the raw tea leaves that you smell in our tea factory.

During the time we harvested this tea, we received periods of sunny and dry days. This tea has an honest, straightforward taste, perhaps as it grew steadily under such conditions. On a side note, our garden brews this tea every morning! With this tea, I feel my mind and body are in balance.
Notes: Mountain-grown. Steaming is on the long side of standard steaming for sencha, not quite fukamushi. This results in a broken leaf and a near fukamushicha-like opacity.

This yabukita sencha from Kuma Tea Gardens is an artisanally crafted sencha, grown with reduced use of pesticides and harvested in April 2021. It is our most typical and traditional sencha, great for everyday drinking. It is simultaneously delicate yet provides a strong umami aroma and flavor. This is what Kuma-san says about the mountain-grown yabukita sencha from this year:

This yabukita sencha is full of life energy, highly aromatic, with refreshing notes of spring. When you enter our tea factory during this time of year, it is filled with the scent of freshly picked tea leaves, it’s such a pleasant olfactory sensation! Our yabukita sencha is a tea that could be described as one that has captured the scent of the raw tea leaves that you smell in our tea factory.

During the time we harvested this tea, we received periods of sunny and dry days. This tea has an honest, straightforward taste, perhaps as it grew steadily under such conditions. On a side note, our garden brews this tea every morning! With this tea, I feel my mind and body are in balance.
Notes: Mountain-grown. Steaming is on the long side of standard steaming for sencha, not quite fukamushi. This results in a broken leaf and a near fukamushicha-like opacity.

From the fields of family-operated tea farm, Tomizawa Tea Garden, a shincha shaded for about 2 weeks before early May harvest (making it a kabusecha). The Yabukita tea cultivar is the standard in the tea industry for providing great flavor (enhanced by the shading).

As a steamed tamaryokucha (or guricha), the leaves are not rolled into straight needles as you would see with sencha, but rather left slightly curled by skipping the last rolling step.

In April 2016, Mashiki, Kumamoto Prefecture affected by the Kumamoto Earthquakes with main shock at magnitude 7.0. The earthquakes have resulted in 48 deaths, 3000 injuries, and nearly 200,000 people evacuated to shelters in the aftermath.

Tomizawa Tea garden also had been affected by this earthquake losing their tea shop. However, they used this opportunity to rebuild their shop in 2018, calling it the Greentea.Lab.

The Azuma family has selected two cultivars from their pesticide free, shaded gardens to create a balanced, delicious blend. While not as umami rich as conventionally grown leaf using artificial fertilizers and pesticides, the Yabukita and Gokou cultivar blend creates a naturally complex flavor profile.
Following the harvest in the spring, tea leaves are immediately steamed before rolling and drying into sencha. During this initial steaming phase, by increasing the steaming time (40+ seconds), we create fukamushi or deep-steamed tea. This deep-steaming breaks down the cells in the leaf more than regular steaming allowing the flavor to be released more quickly and in greater amounts when steeping. This results in a deeper green, but more opaque tea with a strong flavor.

Because mountain-grown tea leaves are more delicate than those grown on flatlands, we only increased the steaming by a little in order to create a unique balance between astringency (shibumi) and sweetness (amami), with hints of the soft young leaf buds.
