About the Garden

The 4th generation Kiroku Tea Garden is in the heart of Wazuka, Kyoto prefecture, an area whose mountain tea fields and undulating terraced slopes thick with fog make perfect tea-growing conditions. Founded nearly 100 years ago, before cars and farming machinery were available, their mountain fields were cleared by hand by the Great-Grandfather of sisters Megumi and Ui Hori.

Today, with their mother, the sisters find themselves in the unusual position of being a farm entirely owned and operated by women. After the passing of their father, the three women took over the running of the farm to continue their family’s legacy, one that began in these fields all those years ago. In the male-dominated tea agriculture and production industry, their efforts are a challenge to the status quo. At Yunomi, we are proud to support their dedication. This yabukita cultivar tea leaf was shaded for 5 days before harvest beneath traditional straw shading (the kind used in heritage grade gyokuro and matcha). This creates the exquisitely balanced sweetness.
\n
It was handpicked with the 30 pluckers directed to choose only the bud and first leaf for the most delicate needle. Only 3kg were harvested of which we have 1kg.
\n
Then, light steamed (asamushi), the leaf remains intact, allowing a very careful crafting of the leaves into perfect needles, resulting in a translucent golden liquor.
\n
Finally, the finishing of the tea is done by hand, filtering out tea fannings and stems, the slowly green-roasted on a tradition Japanese washi paper table for about 8 min (heated to 77C, with the leaf heating to about 45C). The table itself was heated with bamboo charcoal (binchotan) with the heat adjusted by adding ash created from straw.
\n
To prevent the needles from breaking in transit to you, the tea is packaged in mini matte black cans. Note: limit of 50g per customer.

Tea: 2-3 grams. Time: 1-2 min. Water: 50C/122F, 30 ml.

The 2nd steeping may use hotter water, steeping for 10-15 seconds. I prefer 70C/158F and 200 ml of water. Subsequent steepings may require more time - generally 60 seconds. A final steeping can be of cold water, 500 ml, and left in the refrigerator overnight for a light, refreshing iced tea the next morning.

Alternatively, steep it under ice, allowing the ice to steep the tea leaf as it melts.

Komatsu Naomi of Kanes Tea Factory always has the best tea in mind for the Japanese tea connoisseurs of Yunomi.life.
\n
This yabukita cultivar tea leaf was shaded for 5 days before harvest beneath traditional straw shading (the kind used in heritage grade gyokuro and matcha). This creates the exquisitely balanced sweetness.
\n
It was handpicked with the 30 pluckers directed to choose only the bud and first leaf for the most delicate needle. Only 3kg were harvested of which we have 1kg.
\n
Then, light steamed (asamushi), the leaf remains intact, allowing a very careful crafting of the leaves into perfect needles, resulting in a translucent golden liquor.
\n
Finally, the finishing of the tea is done by hand, filtering out tea fannings and stems, the slowly green-roasted on a tradition Japanese washi paper table for about 8 min (heated to 77C, with the leaf heating to about 45C). The table itself was heated with bamboo charcoal (binchotan) with the heat adjusted by adding ash created from straw.

To prevent the needles from breaking in transit to you, the tea is packaged in mini matte black cans. Note: limit of 50g per customer.

Steeping notes
\n
Tea: 2-3 grams. Time: 1-2 min. Water: 50C/122F, 30 ml.
\n
The 2nd steeping may use hotter water, steeping for 10-15 seconds. I prefer 70C/158F and 200 ml of water. Subsequent steepings may require more time - generally 60 seconds. A final steeping can be of cold water, 500 ml, and left in the refrigerator overnight for a light, refreshing iced tea the next morning.
\n
Alternatively, steep it under ice, allowing the ice to steep the tea leaf as it melts.
To make gyokuro, tea bushes are shaded directly for about 3 weeks cutting out the sunlight increasing umami flavor and decreasing bitterness. The leaves are then harvested by machine and processed using sencha processing methods--steaming, rolling, and drying.
\n
Finally, during the finishing process, stems of the leaves are separated. This makes a karigane, or high grade stem tea, called \"shira-ore\" in the Kyushu region. The stems tend to have less flavor overall, but also less bitterness and more sweetness.
\n
To steep this tea, prepare your hot water (or cool off to) 50 ℃ so that the tea leaves are soaked and wait for 2 minutes. Please enjoy the traditional taste and aroma that spreads in your mouth.

To make gyokuro, tea bushes are shaded directly for about 3 weeks cutting out the sunlight increasing umami flavor and decreasing bitterness. The leaves are then harvested by machine and processed using sencha processing methods--steaming, rolling, and drying.

Finally, during the finishing process, stems of the leaves are separated. This makes a karigane, or high grade stem tea, called \"shira-ore\" in the Kyushu region. The stems tend to have less flavor overall, but also less bitterness and more sweetness.
\n
To steep this tea, prepare your hot water (or cool off to) 50 ℃ so that the tea leaves are soaked and wait for 2 minutes. Please enjoy the traditional taste and aroma that spreads in your mouth.

Tencha is the name of the leaf used to make matcha. It is generally made by shading to prevent the leaf from becoming bitter (reducing sunlight prevents catechin from building up as the leaf grows), then steaming, drying without rolling, and finally refining into flakes.

The Yabukita cultivar is the most common cultivar grown in Japan because it is a perfect balance between ease of cultivation and flavor (for sencha). It has become the standard in Japan as a result. However, the cultivar does not produce the greenest color, nor the sweetest flavor as tencha / matcha, so is often used for lower grade matcha (culinary and lower grade ceremonial).

Grade: This particular would like be ground into a Standard Ceremonial Grade matcha if made commercially.
\n
You can enjoy this tencha as a tea, or attempt to grind it yourself. Note that commercial level stone mills as well as pulverization machines can create very fine grain matcha powder (5 microns at the highest quality, 15-25 microns for lower quality matcha). Grinding on your own with a handheld grinder or even a coffee grinder will probably not reach the higher quality levels, but 20-30 microns may be possible depending on your grinder.

Steeping recommendation as tea \n
\n
There is no one recommended method to steep tencha since it's not commonly consumed as tea, but we recommend you start with standard sencha steeping and then adjust the parameters to preference: 3 grams of tencha, steeped for 2 minutes in 200 ml of 70C/160F degree water.
\n
Use hotter temperature to extract more astringency and bitterness, cooler temperature for more sweetness. Use more leaves or less water for stronger flavor.
\n
Cold steeping: I also recommend cold steeping 5g / 500 ml of water in the refrigerator overnight: 8-12 hours.

Tencha is the name of the leaf used to make matcha. It is generally made by shading to prevent the leaf from becoming bitter (reducing sunlight prevents catechin from building up as the leaf grows), then steaming, drying without rolling, and finally refining into flakes.

The Yabukita cultivar is the most common cultivar grown in Japan because it is a perfect balance between ease of cultivation and flavor (for sencha). It has become the standard in Japan as a result. However, the cultivar does not produce the greenest color, nor the sweetest flavor as tencha / matcha, so is often used for lower grade matcha (culinary and lower grade ceremonial).

Grade: This particular would like be ground into a Standard Ceremonial Grade matcha if made commercially.
\n
You can enjoy this tencha as a tea, or attempt to grind it yourself. Note that commercial level stone mills as well as pulverization machines can create very fine grain matcha powder (5 microns at the highest quality, 15-25 microns for lower quality matcha). Grinding on your own with a handheld grinder or even a coffee grinder will probably not reach the higher quality levels, but 20-30 microns may be possible depending on your grinder.

Steeping recommendation as tea \n
\n
There is no one recommended method to steep tencha since it's not commonly consumed as tea, but we recommend you start with standard sencha steeping and then adjust the parameters to preference: 3 grams of tencha, steeped for 2 minutes in 200 ml of 70C/160F degree water.
\n
Use hotter temperature to extract more astringency and bitterness, cooler temperature for more sweetness. Use more leaves or less water for stronger flavor.
\n
Cold steeping: I also recommend cold steeping 5g / 500 ml of water in the refrigerator overnight: 8-12 hours.
Young tea farmer Yuki Kayashita learned kancha making from tea farmers in the mountains of Asuke Village, Aichi Prefecture. It is an earthy and mellow tea that can be enjoyed by all; from children to the elderly. Today, it is an extremely rare tea that few producers adopt, originally made in regions such as Asuke village, Aichi Prefecture and Shishikui village, Tokushima Prefecture. You can also simply enjoy the appearance of the leaves themselves. This tea lends itself to long term aging, changing little over time.

Produced using late first flush spring leaves harvested in June after the May first flush harvest. In other regions, this late first flush harvest is called Oyako Bancha.

Oxidization in the leaves are then stopped using the pan-fired (kamairi) method of processing, the leaves are rolled, dried in a greenhouse under the sunlight. And finally, the tea is roasted.

This tea processing method is a folk tea called Kumano Bancha 熊野晩茶 in the Kumano region of Wakayama Prefecture, which Mitocha is attempting to preserve.. It was used to make rice porridge to be eaten with pickled vegetables and dried foods, and drunk as an every day tea. It also ages well according to the Mitocha.

Produced using late first flush spring leaves harvested in June after the May first flush harvest. In other regions, this late first flush harvest is called Oyako Bancha.

Oxidization in the leaves are then stopped using the pan-fired (kamairi) method of processing, the leaves are rolled, dried in a greenhouse under the sunlight. And finally, the tea is roasted.

This tea processing method is a folk tea called Kumano Bancha 熊野晩茶 in the Kumano region of Wakayama Prefecture, which Mitocha is attempting to preserve.. It was used to make rice porridge to be eaten with pickled vegetables and dried foods, and drunk as an every day tea. It also ages well according to the Mitocha.
