These quick to make oat biscuits combine a buttery flavour and crispy texture with the toastiness of genmaicha or hojicha (depending on which one you choose). Perfect enjoyed on their own or with a cup of tea or tea latte, these biscuits are a great way to brighten up your day.
Which tea powder to use?
Making these biscuits with genmaicha will result in warm and rich flavour with depth from the green tea as well as toastiness from the roasted rice. The hojicha ones in turn have more of a roasted flavour, however as the tea notes blend so perfectly with the buttery notes of the biscuit base the flavour becomes more subtle compared to the genmaicha version. We recommend doubling the dough and trying out both versions!
For this recipe we used our Palette powders, they are a great addition to any baking or drink making toolkit. For the genmaicha biscuits we used Palette Genmaicha and for the hojicha ones Palette Mellow Hojicha. But we recommend trying out making these biscuits with other Palette powders too.

Ingredients
2 dl Oats
1 dl Sugar
1 tbsp Wheat Flour
1 tsp Baking Powder
50 g Butter
1 Egg
7 g Genmaicha Powder or Hojicha Powder
How to Make
- Melt butter until liquid and let it cool down at room temperature while you prepare the rest of the ingredients.
- Mix together oats, sugar, flour, baking powder and genmaicha or hojicha powder.
- Pour in the somewhat cooled down butter and mix.
- Finally mix in the egg.
- Place small round dollops of dough on parchment paper. The cookies will become thin and round as they are baked, there is no need to flatten or shape the dough before baking. Leave ample space between the dough as it will expand significantly. Bake in 200 Celcius for 6 to 7 minutes.
- After taking the cookies out, let them cool down before moving them. They will remain soft until completely cooled. The result will be crispy, thin cookies full of delicious flavour from the tea powder of your choosing!
