A traditional blended miso crafted in Takayama by the long-established brewery Kusakabe Miso Shoyu Brewery, founded in 1890. This Inaka Miso (country-style miso) reflects the deep-rooted fermentation culture of the Hida region, where time-honored techniques have been carefully preserved for generations.

This miso is made by blending mellow rice miso and aromatic barley miso, then slowly aging it over time to develop a rich depth of flavor. The natural fermentation process brings out a well-balanced umami, gentle sweetness, and a smooth, rounded finish.

Its flavor is robust yet refined, combining the soft sweetness of rice koji with the savory aroma of barley miso. The result is a versatile miso that enhances a wide range of dishes, from simple miso soup to simmered vegetables and grilled ingredients.

Crafted with care using traditional methods, this miso embodies the spirit of regional Japanese cuisine and everyday comfort.
