The Saemidori cultivar is a hybrid crossbreed between the Yabukita and Asatsuyu tea bush species. In comparison to Yabukita the varietal sprouts several days early and produces a better yield. It produces a deep green leaf and when processed into sencha it expresses a mild yet characteristic aroma.

The sencha produced with this cultivar on the organic farms of Tsukigase Kenkō Chaen is especially rich in minerals. Although a hint of herbal bitterness may be distinguished, it pleases the drinker with a natural umami flavor that could be likened to the sweetness of corn. Its authentic fragrance is again slightly enhanced through a short period of gentle withering prior to processing.
