Farm Introduction

According to Hiroki Murakami, who will become the farm's 4th generation master, the family doesn't know exactly when they started farming tea, though his great-grandfather was the one who built their first processing factory in the late 19th century.
\n
Based in the Yoshiwara district, a mountainous region famous for its sea of clouds within the municipality of Shizuoka City, the family produces about 2 tons of tea altogether per year (first and second flushes).
\n
Their leaves are mostly processed as a near-fukamushi (deep steamed), a steaming technique that creates a tea that has fukashimicha's deep, opaque green color and sweetness, but while also retaining much of the leaf's shape.
Grown and processed by the Shimizu family of Suizawa, Mie Prefecture.

Konacha itself is made up of the smallest, broken bits of tea leaves (not quite powder) left over after processing (see photo). Because of the small size, it steeps very quickly. Konacha is a tea that can be mixed with hot or cold water as instant tea. You can ingest the entire nutrition of tea leaves. It is also well-suited for cooking and making sweets.

A standard bancha from the Kurihara family who grow and process tea in the mountains of southern Japan. Based in Yabe-mura (population 1000), the Kurihara brothers are 4th generation tea farmers growing tea leaves under the tutelage of their father who is now a respected councilman in Yame City.

Bancha tea is known for its strong astringency. Usually produced in the summer and autumn, it is exposed to sunlight during cultivation and the leaves are allowed to grow large. The result is a tea leaf that his proportionately heavy in catechin antioxidants while relatively low in caffeine (though not caffeine free).

A standard bancha from the Kurihara family who grow and process tea in the mountains of southern Japan. Based in Yabe-mura (population 1000), the Kurihara brothers are 4th generation tea farmers growing tea leaves under the tutelage of their father who is now a respected councilman in Yame City.

Bancha tea is known for its strong astringency. Usually produced in the summer and autumn, it is exposed to sunlight during cultivation and the leaves are allowed to grow large. The result is a tea leaf that his proportionately heavy in catechin antioxidants while relatively low in caffeine (though not caffeine free).

This tea is shaded for 7-10 days to increase its umami flavor and reduce bitterness, and is then deep-steamed (steamed for a longer than usual amount of time), which creates a very soft leaf, broken into fragments during rolling. This creates a deep, richly flavored and beautifully opaque green tea.
\nResteep up to 3 times. The second resteeping can be quick, water in and out as the leaves are already primed. Using hotter water may also extract stronger flavor in subsequent steeps.

This tea is shaded for 7-10 days to increase its umami flavor and reduce bitterness, and is then deep-steamed (steamed for a longer than usual amount of time), which creates a very soft leaf, broken into fragments during rolling. This creates a deep, richly flavored and beautifully opaque green tea.

Recall that kukicha literally means \"stem tea\", and is a derivative of the refinement process of sencha. Refining sencha tea leaf involves the removal of stems, small leaf bits, and tea dust. Each part has a different weight, and separation occurs by blowing the unrefined dried tea leaf and allowing each part to fall into different containers. For this reason, kukicha is not 100% stems but a mix of stems and smaller leaf bits.

When preparing this tea, there is no need to cool the hot water (i.e., the boiled water can go straight into the tea pot). It can also be enjoyed cold in the summer time.
