Description
An extremely rare tea that few producers adopt these days, this tea lends itself to long term aging, changing little over time.
Learned from farmers in Asuke Village, in the mountains of Aichi Prefecture, farmer Yuki Kayashita harvests whole branches of leaves and steams it in a steamer made from wooden barrels placed over steam created from boiling water with firewood. After steaming for an hour, the leaves are easily separated and removed from their branches. They are then laid out to be dried in the cold, dry winter air and sun.
[製法] 茶の葉を枝ごと刈り取り樽を改造した蒸し器へぎっしり詰め込みます。そして薪でグラグラ沸かした湯でしっかり蒸します。蒸せたところで枝から葉を外して寒風に晒して乾かします。作り方は愛知の足助のやり方を参考にしています。
[特徴] 大寒の頃に作られるお茶です。寒茶は生産者の少ない非常に珍しいお茶です。葉っぱそのものの見た目も楽しめます。熟成にも向いています。
