Tea expert Tyas Sosen says...

The main ingredient for this blend is tea leaves obtained from the Yabukita cultivar. Farmer Iwata currently manages over 30 plots of land that add up to a total of approximately 7ha of farmland. Each plot is again divided in fields of different cultivars. Since the farmer at most of his farms omits the use of all agricultural additives, he relies on the environment alone to nourish his bushes.
The tea grown in this fashion becomes depended on its immediate surrounding circumstances and automatically alters its growth to harmonize. Admittedly, the same cultivar grown on a different plot of land will vary in taste and aroma. This is why farmer Iwata treats each batch from each plot of land individually, and singlehandedly assesses the differences in the finished products.
It is based on the differences that come forth of terroir and time of harvest that this farmer decides which tea to use for this blend. And in this particular case, several production lots of Yabukita were combined to produce a light and sweet sencha tea with an aroma that best expresses the traits of the Yabukita cultivar.
