History of Fu

中国、唐の時代半ば8～9世紀に麵筋(メンキン)とよばれる麸に相当する食材がすでにありました。この「麺筋」は仏教の交流と共に中国の学僧によって日本に伝えられました。

麺筋とは、小麦タンパク質(グルテン)のことで、小麦の皮の部分にタンパク質が多く含まれ「ふすま(麸)」と呼んでいます。この「ふすま」を漢字で「麬」とつけられたのが「麸(FU)」の語源の由来のようです。

小麦の果皮の部分を無駄なく利用された食材で、肉食を禁じられていた仏教の修行僧の貴重なタンパク源として精進料理に用いました。製粉をひき臼で行うようになったのが江戸時代といわれるので、この年代から一般の人にも広まっていったと思われます。

日本に伝わったのは、鎌倉時代という説や室町時代という説などがありますが、「麸」という文字が約1000年前、平安時代の日本最古の辞典に収載され「こむぎのかす」と言う大和言葉が付され小麦の「皮屑ｸｽﾞなり」という定義もついているとのことです。

1万5千年の歴史のあるコムギが、日本では約２千年前の遺跡から出土しており、最古の辞典には「古牟岐(コムギ）・末牟岐(マムギ)の名で伝わる」としていることから推測して、ヤマト朝時代の伝来で、飛鳥時代にすでに麸を食していたのでは！岐阜の本巣市にあります樹齢1500年の淡墨桜を植えたとされている継体天皇の時代まで遡るのではないかと浪漫も膨らみます。
