The Yokota family is proud to present a 100% Sayama-grown matcha product from partner Asuka Ltd., a new tencha factory in Sayama City, Saitama.
Origin of the name: Created on the occasion of the 1990 Sayama Grand Tea Ceremony, this exceptional tea was named by Zen Master Sodo Minato, former abbot of Kennin-ji Temple in Kyoto. Drawing inspiration from the character mei (meaning "brightness") of Myoe Shonin—a revered father of Japanese tea culture—and the lush green pines of Sayama Inariyama Park, the name evokes the translucent beauty of pine needles held up to the sunlight, radiating a vibrant, richly flavorful fresh green (samidori).

STEEPING NOTES
Mix 1 gram of matcha (about 1/3 tsp) into a bowl with hot water to make a paste. Then add water to desired strength. Sift the powder with a sifter and use a bamboo whisk to prevent clumps. A bamboo whisk also allows you to create foam in the matcha.
