While all tea leaves age with time, with proper storage (stable temperatures, sealed packaging), the primary flavor components that should decrease are the ones that create bitterness. This should create a tea leaf that has a more mellow flavor than when it was freshly harvested, and what we call in the Japanese tea industry, “Kuradashicha” (“tea removed from storage”).
