Mochi rice (もち米 mochi-gome in Japanese) is polished short-grain rice that is used to make various types of rice dumplings and sweets. Toasted mochi rice is often sweeter and more nutty than normal rice. Shiobara-san mixes this rice with black soybeans from Tokachi region of Hokkaido. Mix with green tea leaves to make your own genmaicha.
