Description
A very grassy, astringent form of green tea made with leaves that have been allowed to mature, allowed to be grown to a large size -- the strong grassiness / bitterness / astringency is considered to be of lower quality in Japan. Higher quality can be made with a spring harvested leaves (generally leaves continue to grow after the spring harvest of higher grade leaves has been completed), while summer and autumn harvests are of lower quality.
This tea tends to have lower amount of caffeine as well as sweetness/savoriness. It also makes for a great base to blend with other ingredients as flavored tea.
Steeping Notes
Tea: 5 grams. Time: 1 minute. Water: 200 ml. 80C/176F degrees.
