How to make Pumpkin Puree
pumpkin or butternut squash (peeled and seeded, cut into evenly sized cubes)
1 (To microwave) Put the cubes in a bowl covering in a cling film, and heat at 500W for 5-6 mins.
(To steam) Put the cubes in a steamer or colander set over a pan of simmering water and cook for 10-15 mins. Test with the point of a knife that it's soft enough to mash. Cook for longer if it's not done. Take it out, mash them or put them into a blender.
Matcha Pumpkin Spice Latte RECIPE
[ For 2 cups ]
3 cups milk (dairy or non-dairy)
2 tablespoons pumpkin puree, or more to taste
2 tablespoons sugar
1.5 teaspoon pumpkin pie spice (or 1 teaspoon ground cinnamon, 1/4 each of ground ginger and nutmeg), plus more for topping
2 tablespoons Matcha
4 tablespoons water
1 Mix matcha with the water in a cup until smooth and free of lumps.
2 To a small saucepan, add milk, pumpkin puree and sugar. Warm gently and whisk until smooth and warmed through. Turn off the heat ,add the spice and the matcha. Whisk until smooth.
3 Pour the mixture into two cups. Serve as it is, or top with whipped cream and a pinch of spice and / or matcha.
