Description
A special, Limited Edition shincha from Shizuoka, this tea was handpicked in early April and steamed lightly for perfect leaf shape and quality.
The tea farmer developed this rare tea cultivar "Marishi" containing a lot of chlorophyll that makes leaves dark green. Featuring a high umami content, the leaf produces a naturally sweet and rich flavor. It was originally selected from a natural seedling of the cultivar Sugiyama Yaeho (which itself was developed by Sugiyama Hikosaburo, the father of the widely cultivated Yabukita cultivar). The plant was then propagated by the Yamamori family in Shizuoka and registered officially in 1996
Notes from Ian (2021): My own tasting of this tea left me at a loss for words. I wanted to say it was silky, but that also doesn't describe the light, fluffiness...after some thought, I think the best analog would be if a bancha is a baseball, it's astringency and bitterness creating a hard flavor profile, this tea is like holding down feathers lightly in your hand. I apologize for not having better words to describe this amazing tea.
