A very interesting post-fermented tea, this tea has a quite unique flavor profile which probably owes to the two-step fermentation process; it's definitely unlike any tea I've ever...view more had before. The liquor has an inviting cloudy yellow-orange amber color and a savory fragrance which somehow makes me nostalgic for the grillbars of the 1980s. The savory fragrance is reflected in the overall flavor of the liquor, which borders on umami. Moreover, the tea has sour notes (to be expected due to the anaerobic bacterial fermamtation stage) and - surprisingly - slightly sweet notes as well. I tried two brewing methods: boiling the leaves for 10 minutes and steeping the leaves for 10 minutes in 95˚c water. While the results were favorable in both cases, the former produced a better tasting liquid than the latter. Like Chinese pu-erh, this is a dark tea, but it doesn't taste like pu-erh at all, which I appreciate. I love pu-erh, don't get me wrong, but this goishicha is just unique and must be experienced firsthand. view less
The taste has notes of prunes, dates, and a hint of sesame with a sweet date-like finish. This is definitely one of my favorite Japanese post-fermented teas. I can quite literally drink it by the mug-full.
