A premium unshaded first flush sencha from the Takarabako Tea Farm in Shimane Prefecture.

Time to start steeping away at this big tea stash I have now. First up from @yunomitea, the Takarabako Tea Farm Premium Shimane Sencha 2016. If there's one thing I love about Japanese tea packaging it's the quality and care that goes into it. The paper these have for the packaging is wonderfully tactile. I just love it! Plus there was a dessicant pack in there, which is a nice touch. 5 grams, 1 minute, 200ml of 70°C water. I was expecting a lot more colour out of this, the picture is deceiving and it's quite pale. The aroma is super buttery, with edamame, spinach and some nutty notes to it. Drinking it you really don't get much bitterness but there is a slight lingering sweetness to it. Flavourwise you have your (just about) standard edamame and salad greens going on, along with some chestnut flavour in there. Then things get weird. There's a creaminess to the finish that's hard to pin down, my first thought was butter. Nope, not buttery, but it's familiar. Then it hit me: ricotta cheese. Yeah, strange, I know. I've now had a lot of Sencha over the past few months, and I'm getting a bit Sencha'd out right now (only 2 more to taste through..) but this was a solid example I would buy again. #tea #sencha #japanesetea #japantea #yunomilife

About Takarabako Tea Farm

Established in 2003 as a subsidiary of the landscaping company, Matsuura-Zoen, Takarabako Tea Farm is located in the Oba Sorayama district in the southern part of Matsue City, Shimane Prefecture. The farmers conduct circulation type agriculture mainly based on tea and persimmon in addition to processing the crops and selling them directly to local consumers.

Today, Takarabako manages 7.4 hectares of tea plants, 3.0 hectares of persimmon, and another 2.0 hectares of other agricultural products such as blueberry, plum, perilla, etc. All agricultural products are cultivated with organic compost avoiding use of chemical fertilizers and pesticides. Tea and persimmon crops have been certified organic according to the Japan Agricultural Standard (JAS).
