Overall thoughts:
Really tasty. A minerality remains in the mouth for a long time after sipping. Somehow has a slight roasted taste and smell though I assume this isn’t a pan fired tea. Perhaps the drying process scorched the leaves ever so slightly? Regardless, a nice complexity, making this an interesting tea. view less
Toastiness might be a result of a stronger green roasting (hi-ire 火入れ in Japanese) - a post production light roasting that reduces the leaf's remaining moisture from 5% to 1-2% helping the leaf last longer and imparting a slight toastiness. The farmer will leave it at 5% in its unrefined state (aracha 荒茶) to sell to wholesalers (refiners) who will choose how much to green roast themselves.

A: This farm grows without pesticides and without synthetic fertilizers, but they have not certified as organic, so they are not organic ("organic" being a legal term that requires certification). They also do not currently shade their tea plants, so it is not kabusecha (as of 2018).
