Making Umeboshi (dried plums)

Friends of mine from America and Russia are helping me out with making umeboshi, or dried plums. This stage of the process is called doyouboshi 土用干し. In May, we salt-pickled a batch of plums, and at the end of July we take these and sun-dry them for three days killing bacteria. Then we return them to further pickling.

In the afternoon, it was a little cloudy… before heading out to the fields, should I bring the plums in or take a chance that it won’t rain… decisions, decisions…
