Mountain-grown on a tea field surrounded in mist every morning, this competition grade sencha made from Yabukita cultivar tea plants was shaded for 3 days before harvesting, and aged at the Kuma Tea Gardens temperature-controlled warehouse in order to create a elegantly mellow flavor. It's hard to imagine that a sencha can taste so smooth.
This tea was made specifically for tea industry competitions, so only 5 kilograms was produced.

Cold steeping -- Tea: 5 grams. Time: 5 minutes. Water: Iced water, 50 ml. Use soft water (low in minerals). Even with filtered water, boiling first helps to remove any unnecessary smells from the water.
As a sencha -- Tea: 5 grams.Time: 60-90 seconds. Water: 70˚C/158˚F degrees, 1 cup.
